Fufu that stopped feeling like home.

Somewhere between the doctor's visit and the dinner table, a family gave up fufu. Cassava was the reason. So was gari. So were the numbers on a lab report — the sugar, the pressure, the weight the body had learned to carry.

Swalos began as a private problem. A recipe kept in a Worcester kitchen, tested in a Kumasi one, taken apart and put back together until it behaved like fufu on the tongue and behaved like breakfast in the blood.

What we ended up with isn't a substitute. It's a swallow, made from oats and psyllium fiber, that finishes soft, folds around soup, and doesn't ask your body to pay for it later.

A quiet, unhurried swallow. Steel-cut oats and psyllium fiber, milled and blended in small batches. Cooks in about ten minutes with cold water. That's it.

Whole oat groats, cut — not rolled, not instant. They hold their structure through the cook, then break down into a smooth, elastic dough with the right pull.

    Measure

    One cup of Swalos to one cup of cold water. That's the whole ratio.

    Stir

    Whisk cold, off the heat, until smooth. Cold water first — this is the trick.

    Cook

    Medium heat, stirring with a wooden spoon, until it pulls from the sides. About ten minutes.

  4. 04

    Fold

    Wet a bowl, turn the fufu in, shape it. Serve with light soup, palm-nut, groundnut, or okra.
